Smoked Sausage on Brat and Sausage Rolls

Ingredients
1 Pkg. Turano Brat and sausage buns 1- 6" Smoked sausage link 1 slice Pepper Jack cheese Grilled onions 2 Tbsp. Pico d Gallo *Chipotle Mustard

Directions
* Chipotle mustard; 1/4 cup whole grain mustard, 2 Tbsp. chopped chipotle pepper from can, 2 heaping Tbsp. brown sugar (mix well). Slice 1 medium onion into rings (separate) In a pan heat 1 Tbsp. oil until hot, add onion rings and fry until edges begin to brown, reduce heat to low and cover pan to let the onions cook slowly and caramelize. Meanwhile split the sausage lengthwise, leaving it hinged, Separately heat a second pan or grill until hot, place sausage on grill or pan, cut side down. Grill or heat until sausage begins to brown then turn and brown skin side. Open bun into "V", spread with mustard. Place slice of cheese in bun, then sausage and fill it with grilled onions, top with Pico D' Gallo. Enjoy this spicy juicy treat!
