Grilled Chicken Marinara Sandwich

Ingredients

• 10 slices of Pane Turano
• 2 Chicken breasts
• 2 tbsp. Kosher salt
• ¼ cup parmesan cheese, grated
• 2 tbsp. vegetable oil
• 1 cup marinara sauce
• 1 cup mozzarella, shredded
• Fresh basil leaves
• 4 tbsp. unsalted butter


Directions

• Season chicken breasts with salt and pepper.

• Heat a skillet over medium-high heat and add 1 tablespoon of vegetable oil.

• Once the skillet is hot, add chicken to the skillet and cook on both sides until golden brown.

• Once cooked, slice chicken breasts diagonally into strips.

• To assemble the sandwich: on one slice of bread, spoon a thin layer of marinara on top, then add the mozzarella, slices of chicken, basil leaf, then more mozzarella (optional). Top sandwich with another slice of bread. Repeat until all assembled.

• In a clean skillet, add butter to the pan and turn the heat to medium. Once the butter has melted, place two or three (or as much as you can fit) assembled sandwiches into the skillet. Let the cheese slowly melt and the bread get toasted. Repeat until all sandwiches are complete. Slice, serve and enjoy!
