Maple Bacon and Brie Grilled Cheese


• 4 Rustic Italian Slices
• 4 tablespoons unsalted butter
• 8 (1/2 inch thick) slices of Brie cheese
• 12 thin apple slices
• 1/2 cup baby arugula
• 1/2 cup mayonnaise
• 2 tablespoons honey mustard
• 2 teaspoons pure maple syrup
• 1/2 pound thick cut bacon
• 1/4 cup maple syrup
• 1/4 cup brown sugar


① Place the bacon on a wire rack on a foil-lined baking pan, brush the top of the bacon with maple syrup and sprinkle on some brown sugar.
Bake in a preheated 400F oven for 15 minutes, flip the bacon, brush with maple syrup and sprinkle on the brown sugar and bake for another 15 minutes or until it reaches the desired level of crispiness and set aside.
② Whisk the mayo, honey mustard, and maple syrup until it's ready for use.
③ Preheat panini maker to medium heat.
④ Layout bread and butter on 1 side of each slice. Flip buttered sides over and spread on a thin layer of mayonnaise on each slice of bread. Continue to make a sandwich by layering on the following - 2 slices Brie cheese, 3 apple slices, baby arugula, apple slices, 2 bacon slices, Brie cheese, and another slice of bread - butter side out.
⑤ Add sandwich to panini maker and press for about 10 minutes until the cheese is melted.
⑥ Cut the sandwich in half and serve.
