Maple Sweet Potato Bread Pudding


• 4 Turano Brioche Rolls, cubed
• 2 eggs
• 1 cup milk
• 1/2 tsp cinnamon
• 1/4 cup brown sugar
• 1 cup mashed sweet potatoes
• 1/4 cup golden raisins
• 1/4 cup chopped walnuts
• 1/2 cup whipping cream
• ¼ cup maple syrup


① Preheat oven 350 degrees. Grease an 8”-10” round soufflé dish.
② In a large bowl, whisk together eggs, milk, cinnamon, brown sugar, and sweet potatoes.
③ Add bread to bowl and mix until bread is completely coated with the liquid. Allow bread to soak for at least 30 minutes.
④ Fold in raisins and walnuts.
⑤Pour bread into prepared soufflé dish. Bake for 20-25 minutes, or until golden brown and set.
⑥ Whip cream to medium peaks either by hand or in a food processor. Fold in maple syrup.
⑦ Serve bread pudding topped with maple whipped cream.
