Steak and Eggs Breakfast Sandwich

Ingredients
• 4 Turano Brioche Buns
• 1 lb Skirt Steak
• 4 Eggs
• 4 Cheddar Cheese Slices
• 2 Tbsp Mayo
• 1 Tbsp Ketchup
• 1 tsp Hot Sauce
• Salt & Pepper (To Taste)
Directions
① Remove the steak from the packaging and blot dry with a paper towel
② Season the steak generously with salt and pepper
③ Heat the grill or cast-iron pan to medium-high heat. You should be able to hold your hand above for a few seconds.
④ Sear the steak in the pan and reduce the heat slightly. Cook to desired doneness, about 1.5-2mins per side for medium, depending on the thickness.
⑤ Once cooked, remove from the heat and allow to rest for 1-2 minutes before slicing. Slice the steak against the grain to ensure maximum tenderness.
⑥ Toast the brioche buns on the grill or in the oven for 1-2 minutes
⑦ In a pan on the stove, fry the eggs to desired doneness
⑧ Combine mayo, ketchup, and hot sauce, and spoon onto the bottom half of each bun
⑨ Top the buns with sliced skirt steak and a slice of cheese. Return the sandwiches to the oven to melt the cheese. Top with the fried eggs and the top bun.
