Avocado & Pepper Jack Breakfast Burger

Ingredients

• 1 lb breakfast sausage (seasoned with salt, pepper, and a pinch of smoked paprika)
• 4 slices pepper jack cheese
• 4 eggs
• 1 avocado, sliced
• 4 Sesame Seed Hamburger Turano Bleacher Buns™
• Butter or oil, for grilling
• Chipotle mayo: 1 cup mayonnaise, 1 chipotle pepper in adobo, 1 tsp adobo sauce (from the can), 1 tsp lime juice
• Salt & pepper, to taste


Directions

① Shape meat into 4 evenly sized patties, slightly larger than the buns. Press a small thumbprint in the center of each so they cook flat.
② Preheat grill to medium-high. Grill patties 4–5 minutes per side until cooked through. In the last minute, place a slice of pepper jack on each to melt.
③ Butter the insides of the buns and grill them cut-side down for 30–60 seconds, until toasted and golden.
④ Using the bottom a small ramekin or round container, place a square sheet of foil and begin folding the sides around the bottom of the bowl/container to create the foil dish to cook the eggs in.
⑤ Spray foil dish with cooking spray and crack one egg in each dish.
⑥ Using a spatula, carefully place each dish on the grill. Cook eggs to your liking (fried or over-medium work well). Season with salt and pepper.
⑦ Mix the Chipotle Mayo sauce ingredients in a bowl until well combined.
⑧ Spread a little chipotle mayo on the bottom bun. top with the avocado slices. Add the sausage patty with melted cheese and the fried egg. Cap with the top bun. Enjoy!
