Cheese-encrusted Grilled Cheese
Ingredients
2 tbl. butter
4 slices Pane Turano
6-8 slices Colby Jack cheese
½ cup shredded sharp cheddar
Directions
Melt butter in a large skillet over medium heat.
Add two slices Pane Turano, then add half the sliced cheese to one slice of bread. Let melt 1 minute.
Close sandwich and sprinkle 2 tbl of shredded cheese on top of the bread. Let melt 1 minute.
Flip sandwich over, cheese side down. Top other side of bread with another 2 tbl of cheese and let melt 1 minute. Flip sandwich over to caramelize other side of the sandwich. Cheese will form a crisp golden brown layer.
Repeat for other sandwich, cut in half and serve.
Scoop out most of the doughy center from both halves of rolls; discard.
Spread rolls with mayonnaise; fill with chicken and vegetables. Serve immediately.
