Fried Fish Sandwich

Ingredients

For the Sandwich
• 4 Turano Brioche Buns
• Bib Lettuce
• Lemon Wedges
• Pickled Onions
• Tartar Sauce
For the Tartar Sauce:
• 1/2 cup Mayonnaise
• 1/4 cup Finely Diced Pickles
• 1/2 tsp Salt
• 1 1/2 Tsp Sugar
• 1 Tbs Lemon Juice
• 2 Tbs Pickle Juice
For the Pickled Onions:
• 1 Cup Red Onion Sliced
• 1/3 Cup White Vinegar
• 1/3 Cup Water
• 1 Tsp Kosher Salt
• 2 Tsp Sugar
• Black Peppercorns
For the Chips:
• 2-3 Russet potatoes
• Salt, To Taste
• 3 Cups Frying Oil
For the Fish:
• 4 Flounder Fillets
•1/2 All-Purpose Flour
•1/4 Corn Starch
•1/2 Tsp Baking Powder
•1/2 Tsp Granulated Sugar
•1/4 Salt
•1/4 Ground Pepper
•1/2 Water
•2 Cups For Frying


Directions

① For the Pickled Onions: Finely slice a cup or more of red onion. Add vinegar, water, salt, sugar, and peppercorns to a small pot and bring to a simmer. Stir until salt and sugar have dissolved. Add onions and Blanche for one minute. Turn off heat and leave onions in the pot for 10 minutes. Transfer pickled onions to a glass container and place in refrigerator to cool.

② For the Tartar Sauce: Finely dice 2 small dill pickles. Add to a small mixing bowl with mayonnaise, lemon juice, pickle juice, salt, sugar. Mix well and adjust to your Tate. Place in refrigerator to chill.

③ For the Double Fried Chips: Bring a large pot of frying oil up to a temperature of 300°F. Line a cooling rack with several layers of paper towels. Preheat Oven to 200°F. Cut 2-3 large Russet Potatoes into long wedges, about 8 per potato. Fry potatoes for about 5 minutes in batches and set on a paper towel to drain. Adjust heat and increase oil temp to 375F. Fry for 2-3 minutes until golden brown and transfer to a paper towel to drain. Immediately sprinkle with sea salt. Keep potatoes warm in a 200°F oven.

④ Into a mixing bowl, add the flour, corn starch, baking powder, sugar, salt, and black pepper. Mix to combine. Add ice-cold water. Whisk until the mixture comes together into a batter. Dip Flounder Fillets into the batter to coat. In a skillet, heat the cooking oil (as needed). Add flounder fillets and fry until golden brown, about 3-4 minutes on each side. Remove finished fillets to a plate lined with paper towels to drain excess oil.

⑤ Put all the ingredients together into a sandwich and enjoy!
