Pulled Pork Burger

Pulled Pork Burger

Ingredients
½ head red cabbage, shredded 1 poblano pepper, sliced into thin ribbons ½ cup red wine vinegar ½ tsp salt ½ tsp sugar ¼ cup water 2 tbl. oil 1 lb. pulled pork, unsauced, cold 1 egg, beaten Salt and pepper, to taste 4 Turano Brioche Buns, toasted 1 cup Poblano slaw Mayonnaise, if desired

Directions
In a sauce pan over medium heat, combine vinegar, salt and sugar and stir periodically until salt and sugar have dissolved. Add water to the mixture. Pour vinegar over poblano strips and cabbage. Mix thoroughly. Refrigerate for at least 30 minutes. Heat oil in a large skillet over medium-high heat. Combine the egg with the pulled pork and mix until completely coated. Form four equal sized balls, squeezing out the excess moisture. Place pork in the pan, season with salt and pepper and flatten with a spatula into patties. Cook about 3 minutes per side or until a crisp crust has formed. Place on brioche buns with mayo and slaw and serve.
