Bacon Corn Dip
Bacon Corn Dip
Ingredients
5 slices of bacon
3 cups of sweet corn kernels, canned
1/2 cup diced onion
1/4 cup chopped green onion
1/2 cup diced red bell pepper
1 jalapeño, diced
1 tsp chili powder
4 oz cream cheese
3 tbs milk
1 clove garlic, minced
1 tsp sugar in the raw
salt and pepper to taste
Directions
Cook bacon in large skillet over medium-high heat, until brown and crispy.
Transfer to a separate plate and pat dry with paper towel, drain excess fat.
Bring skillet back to heat, and add the corn, onion, pepper, and jalapeño.
Cook 4-5 minutes, stirring occasionally, until tender.
Add in the cream cheese and milk and cook another 2-3 minutes, or until well blended.
If mixture is too thick, add more milk until you reach desired consistency
Place mixture into a bowl, stir in the green onions and sugar and add any salt and pepper as needed.
Crush up the bacon, and sprinkle over the top.
Serve immediately
