Best Bacon Burger on Brioche Roll

Ingredients

2 thinly sliced red onions
6 tbs. olive oil, plus more
1/2-cup mayonnaise
2 tbs. fresh lemon juice
Salt and freshly ground pepper
8 slices of bacon (12 ounces)
3 pounds mixed ground chuck and ground sirloin
12 ounces brie, sliced
8 Turano Brioche Rolls


Directions

Preheat the oven to 400°. Toss onions with 2 tablespoons olive and roast 20 minutes, until soft.
Whisk mayonnaise and lemon juice. Slowly add ¼ cup olive oil then season with salt and pepper.
Cook bacon according to your preference.
Cook burger patties about five minutes on each side. After flipping, form Brie onto the top of the patty. Cheese should be only slightly melted.
Brush with olive oil then season with salt and pepper.
Spread lemon mayo on inside of Turano Brioche Rolls. Stack bottom with burger, bacon, and onions. Top with roll and serve!
