• 4 Rustic Italian, slices
• 4 Large eggs
• 1 1/2 tbsp of butter
• 1/4 cup cooked or pancetta
• Salt and pepper taste
• Shredded parmigiano cheese
• Mayonnaise in a tube
① Dice your pancetta and cook on medium-low to medium heat for 3-4 minutes and set aside.
② Place the Rustic Italian on a large baking sheet. Spread the butter on the Rustic Italian slices and spread the mayonnaise around the crust of the bread (this will allow the eggs to stay in the middle of the bread).
③ Crack 1 egg on each bread and season it with salt and pepper to taste.
④ Over the toast, sprinkle the pre-cooked pancetta, Parmigiano cheese on top of the eggs (in that order).
⑤ Place the toast in the oven and cook at 500°F for 5-6 minutes and take it out of the oven. Feel free to add more cheese on top and enjoy!
