Pane Pesto Chicken Pizza


4 slices Pane Turano
1 medium, skinless chicken breast, cut into 1-inch cubes
⅓ cup basil pesto
½ cup cherry tomatoes
1 cup mozzarella cheese, shredded
Olive oil
Parmesan Cheese (for serving, if desired)


Arrange an oven rack in the middle of the oven. Preheat at 400°F.

Heat the oil in a large frying pan over medium-high heat. Add the chicken and two generous pinches of salt. Fry until golden brown and cooked through, about 10 minutes. Remove from heat.

Place the Pane Turano on a baking sheet. Spread the pesto on the bread, then top with half the tomatoes and half the chicken. Sprinkle the mozzarella on top. Finish by adding the remaining tomatoes and the chicken.

Bake until the bread is toasted and the cheese has melted. Drizzle with olive oil and parmesan cheese if desired.
