Churro French Toast Ice Cream Sandwich
4 slices of Turano Italian Round Bread
2 large eggs
¼ cup milk
1 tbsp. granulated sugar
½ tsp.ground cinnamon
1 tsp. pure vanilla extract
2 tbsp. butter, divided
For coating: ¼ cup cinnamon sugar OR ¼ granulated sugar + 1 tsp. ground cinnamon
Ice cream or frozen yogurt
Whisk together eggs and milk with the sugar, cinnamon, and vanilla extract in a wide shallow bowl. Dip the bread into the egg wash, rotating quickly to soak evenly. Be careful not to soak for too long, as it can become soggy.
Prepare a separate shallow bowl with the remaining sugar and cinnamon for the coating. Then, heat a non-stick pan or skillet with ½ a tablespoon of butter. When the pan is hot, fry the bread in batches on low to medium heat or until each side is golden.
Immediately dip the bread - using tongs - into the cinnamon sugar mixture, coating evenly. Allow the bread to cool slightly. Take one slice, top with a scoop of ice cream (or frozen yogurt), and place another slice on top. Serve immediately.
