Grilled Chicken Sandwich with Mango Salsa

Ingredients
• 4 Turano Gourmet Sandwich Rolls
• 4 slices of mozzarella cheese
• 4 boneless skinless chicken breasts
• 1 teaspoon of garlic powder
• 1 teaspoon of ground cumin
• 1 teaspoon of smoked paprika
• 1/2 teaspoon of ground coriander
• 1/2 teaspoon of sea salt
• 1/4 teaspoon of ground black pepper
• 2 tablespoons of olive oil
• 2 tablespoons of lime juice
Mango Salsa
• 2 cups mango, diced
• 1 cup red pepper, diced
• 1/2 cup red onion, diced
• 1/2 cup fresh cilantro, diced
• half jalapeño, diced (about 1 -2 tablespoons)
• 1 tablespoon fresh lime juice
• salt to taste
Directions
① Prepare Grill: Preheat grill to medium-high heat, approximately 350-375°F.
② Make the Salsa: in a medium bowl, add mango, red pepper, red onion, fresh cilantro, jalapeno, lime juice and salt to taste. Using a spoon, mix everything until the salsa is well combined. Set aside.
③ Make Spice Rub: In a small bowl, mix garlic powder, cumin, coriander, smoked paprika, sea salt, pepper, olive oil and lime juice. Mix until combined.
④ Prep Chicken: Add chicken to a large bowl, rub mixture over both sides of the chicken breast and let sit for 5-10 minutes.
⑤ Grill: Place chicken on clean grill grates and grill each side for 4-6 minutes depending on thickness. Once flipped, for the last minute melt a piece of Mozzarella cheese on each chicken breast. Remove chicken when internal temperature reaches 165°F.
⑥ Let your chicken rest for 5 minutes. While the chicken is resting, toast the Gourmet Sandwich rolls directly on the grill until golden and remove.
⑦ To build the sandwich place grilled chicken breast on the toasted bottom roll, top with a spoonful of salsa, and finish with the top roll. Enjoy!
