Pumpkin Spice Latte French Toast

Ingredients

French Toast
• 2 eggs
• 1/4 cup milk
• 1/4 cup pumpkin puree
• 1/4 tsp vanilla
• 1/2 tsp cinnamon
• 1 tsp pumpkin pie spice
• 2 tbsp brown sugar
• 4 slices Turano Rustic Italian
• 1/4 cup butter divided
• Walnuts or syrup (optional topping)

Espresso Whipped Cream
• 2 cups heavy whipping cream
• ⅓ cup powdered sugar
• 1 tbsp instant espresso powder
• 1 tsp vanilla extract


Directions

① Mix the eggs, milk, pumpkin puree, vanilla, spices and brown sugar in a large shallow bowl or a glass pie plate for easy dipping.
② Melt 1 1/2 tablespoons butter in a large skillet over medium heat.
③ Dip the bread into the egg mixture on both sides and grill in a skillet until lightly golden brown, about 2-3 minutes per side. Repeat with remaining bread and butter as you will likely need to do several batches.
④ Place the whipped cream in a large mixing bowl. Beat on medium speed using an electric mixer for about 1 minute, until the cream starts to thicken.
⑤ Add the powdered sugar, espresso powder, and vanilla extract. Increase to high speed and continue beating for 1-2 minutes, until the cream forms stiff peaks.
⑥ Place the pumpkin french toast on the plate and with a spoon or piping bag add the espresso whipped cream, continue the two steps until the french toast is stacked 4 pieces high. Add whipped cream dollops and walnuts and/or syrup. Enjoy!
