Tomato Soup Dipped Grilled Cheese

Ingredients

• 3 slices of Rustic Italian
• 8 slices mozzarella cheese
• 8 slices cheddar cheese
• 3 T mayo
• Tomato soup
• 1 T butter or avocado oil


Directions

① Spread about 1 - 1.5 T mayo on one side of two pieces of bread
② Flip slices of bread over & place 4 slices of mozzarella & 4 slices of cheddar on each side, set aside. Heat tomato soup so it’s warm. Pour in wide shallow bowl or plate with rim
③ Take your third slice of bread & soak each side in soup so it’s covered. Then place tomato soup soaked bread on top of one of the slices of bread with cheese. Place the other side with cheese carefully on top to close the sandwich
④ Heat butter or oil in pan over medium until warm (2-3 min)
⑤ Place sandwich (mayo side in pan) & cook for about 5 min or until side is golden brown & cheese has started to melt
⑥ Carefully flip the sandwich over - you may need to use 2 spatulas
⑦ Cook for another 5 min, & press down every min or so to smash sandwich a little bit - you can also place a pan on top of sandwich to compress it
⑧ Towards the end, add about 1 t of water to pan away from sandwich & cover so it steams the cheese. Cover for just 1 min.
⑨ Remove sandwich from heat. Slice & enjoy!
