• 6 Rustic Rye slices
• 2 (6 oz.) cans of tuna
• 2.5 c. mayonnaise
• 3 Cheddar cheese slices
• Juice of 1/2 lemon
• 1 ribs celery, finely chopped
• 2 dill pickles, finely chopped
• 1/4 c. finely chopped red onion
• 2 tbsp. freshly chopped parsley
• 2 tbsp. butter
• 1 tomato, sliced
• Salt and pepper to taste
① Preheat oven to 400°.
② In a large bowl, whisk together mayonnaise, and lemon juice.
③ Drain the tuna and add it to the mayonnaise mixture, using a fork or spoon to break the tuna into pieces.
④ Add the chopped celery, pickles, red onion, and parsley and combine. Season with salt and pepper to taste.
⑤ Butter one side of each Rustic rye slice and top the unbuttered side with tuna, a few tomato slices, and sliced cheese.
⑥ Top with another slice of bread with the butter side facing up. Repeat for the remaining sandwiches and bake on a large baking sheet for 5 minutes.
