Vodka Parm Chicken Sandwich

Ingredients
• 2 boneless, skinless chicken breasts
• 1 Turano soft sub roll
• 3 burrata cheese balls
• Seasoned breadcrumbs
• 1 Shallot
• 4 eggs
• Flour
• Parmesan Cheese block
• Vodka
• 2 cans of high quality peeled tomatoes
• Lots of Basil
• ½ - 1 cup Heavy whipping cream
• Salt
• Pepper
• Olive Oil
• Vegetable Oil
• Pecorino cheese
• Crushed red pepper
• 1 white onion
• 3-4 garlic cloves
• Tomato paste
• Can of crushed tomatoes
Garlic Butter:
• Butter
• parmesan cheese
• 1 garlic minced
• oregano
Directions
① Butterfly the chicken breasts into thinner cutlets and beat the chicken to create even cutlets. Set up a breading station with flour in one bowl, beaten eggs in another, and seasoned breadcrumbs mixed with grated Parmesan cheese in a third bowl.
② Dredge each chicken cutlet in flour, then egg, then breadcrumbs. Heat a mixture of vegetable and olive oil in a large skillet over medium-high heat and fry the chicken until golden brown and cooked through, about 4-5 minutes per side. Transfer to a wire rack or paper towel-lined plate.
③ To make the vodka sauce, heat olive oil in a large saucepan over medium heat. Add diced onion and shallot and cook until softened, about 5 minutes. Add the garlic and a pinch of crushed red pepper and cook for 1 minute.
④ Stir in 2 tablespoons tomato paste and cook for 2 minutes. Carefully add a splash of vodka and simmer for 2-3 minutes. Add the peeled tomatoes and crushed tomatoes, breaking up the whole tomatoes with a spoon. Season with salt and pepper and simmer for 15 minutes.
⑤ Stir in the heavy cream and a handful of chopped basil. Simmer for another 5 minutes until the sauce is rich and smooth. Finish with grated Pecorino cheese.
⑥ In a small bowl, combine melted butter, minced garlic, grated Parmesan cheese, and oregano to make the garlic butter.
⑦ Brush the inside of the Turano soft sub rolls with the garlic butter. Toast until lightly golden.
⑧ Spread a layer of vodka sauce on the bottom half of the roll. Add the crispy chicken cutlets and top generously with more vodka sauce. Tear the burrata over the chicken and finish with fresh basil, olive oil, and grated Parmesan.
⑨ Close the sandwich, slice, and serve immediately while the burrata is creamy and the chicken is hot and crispy.
