Bacon Carnitas Sandwich

Ingredients
• 4 Gourmet Sandwich Rolls
• 2 lbs Slab bacon, cut into 1.5” chunks
• 1 cup Apple Cider
• ½ cup Apple Cider Vinegar
• ½ cup Water
• 1 Jalapeno, sliced
Slaw
• ¼ hd Green Cabbage, chopped (about 1.5 cups)
• ½ large Carrot, shredded on a box grater
• ¼ cup Mayonnaise
• 1 tbsp Sugar
• 2 tsp Apple Cider Vinegar
• 1 pinch Salt
Pickled onions
• 1 ea Red Onion, Julienned
• 1 cup Red Wine Vinegar
• 1 cup Water
• 2 tbsp Salt
• 2 tbsp Sugar
• 1 tsp Oregano
Directions
① Combine vinegar, water, salt, sugar, and oregano in a medium pot and bring to a boil, reduce heat and allow to simmer for five minutes.
② Place the onion in a large heatproof dish and pour the pickling liquid over the onions. Stir the onions after 30 minutes, making sure they are fully submerged in the liquid. Allow the onions to cool completely before using, 3-4 hours.
③ Heat the oven to 225 degrees F. In an oven safe dish combine the cubed bacon, apple cider, vinegar, and water. Place it in the oven and cook until fork tender, turning the bacon pieces every 30-45 minutes
④ Combine mayo, sugar, vinegar, and salt in a bowl and whisk until combined. Fold sauce into the cabbage and carrots.
⑤ To assemble the sandwich, butter and toast both halves of the gourmet sandwich rolls. Top the heel of the bun with the bacon, pickled onions, slaw, and jalapenos.
