1 lb. bacon, roughly chopped 1 small red onion, chopped 1 clove of garlic, minced ½ cup dark brown sugar ¼ cup bourbon ¼ cup maple syrup 2 tbl. grainy mustard
In a large skillet pot, fry bacon until cooked, but not completely crisp. Once cooked, set aside and drain all but 1 tablespoon of bacon fat. Sauté the onion and garlic until they turn soft and color becomes golden. Transfer bacon back to the pan, add brown sugar, bourbon, maple syrup, mustard and cook over medium-low heat for 30 minutes, or until deep brown and thickened. Cool and serve on toasted Pane Turano. If desired garnish with crumbled feta or farmers cheese and fresh parsley.
