Thai Basil Chicken Burger

Ingredients
2lb Ground Chicken 2/3 cup cracker crumbs(I used spicy cheez-its) 1/2 cup shredded carrots 1/4 cup chopped scallions 1 cup chopped fresh basil 3 tsp fresh grated garlic 3 tbsp fresh ginger paste or grated ginger 6 tbsp soy sauce 1 tsp chili flakes 5-6 tbsp sriracha hot sauce 1 peeled and sliced cucumber Lettuce (I used butter lettuce) 7-9 eggs Toasted sesame oil (about 4tbsp) 2 tbsp brown sugar 1/2 cup peanut butter 6-8 Turano Bread Brioche Buns

Directions
Set oven to 350. Sauté carrots and scallions with a couple tbsp of sesame oil for about two minutes. Add 1 tbsp ginger paste, 1 tsp garlic and sauté another couple minutes. Then set aside to cool. Mix together ground chicken, cracker crumbs, 1 egg, basil, 1tsp garlic, 1tbsp ginger, 3 tbsp soy sauce, chili flakes, 3tbsp sriracha, 1tbsp brown sugar, a tsp sesame oil, and then the carrot mixture once it cooled. I refrigerated for a couple hours but you could use right away. Form into 6-8 patties and On medium-low heat cook for a few minutes on each side then transfer into the oven to finish cooking for about 10-15 minutes depending on the thickness. (If it’s too many to fry in a pan you could put them on a cookie sheet with parchment paper and oven bake them instead for about 30 minutes total) Fry up the eggs (one for each burger). For spicy peanut sauce: In a small bowl add peanut butter, garlic, ginger, soy sauce, brown sugar, sriracha, and mix-adding a little water to thin it out to desired consistency. Lightly toast the insides of the Brioche buns and add lettuce, patty, fried egg, cucumber slices, and peanut sauce. And enjoy!
