Bird Dog Sandwich

Ingredients

Sandwich
• 4 thick-cut bacon slices, cooked and crisp
• 4 Turano Gourmet Brat Rolls
• romaine or iceberg lettuce, shredded
• Roma tomatoes, thinly sliced
• red onion, thinly sliced
• dill pickles, thinly sliced

Sauce
• 1/2 cup mayonnaise
• 2 tablespoons barbecue sauce
• 2 tablespoons honey
• 1 tablespoon yellow mustard
• 1/2 tablespoon Dijon mustard
• 1/2 tablespoon lemon juice

Fried Chicken - Marinade
• 1 package of chicken tenders
• 1 tsp (each) paprika, garlic powder, onion powder, cayenne pepper
• 2 tsp salt
• 1 Cup buttermilk

Fried Chicken - Breading
• 1 Cup flour
• 2 tsp baking powder
• 1 tsp (each)paprika, garlic powder
• vegetable oil, for frying


Directions

① For the marinade, in a large bowl, add the chicken tenders and 2 Tbsp of the spice mix from earlier. Mix well to coat the spices all over the chicken.
② Pour buttermilk over the chicken and add enough to completely submerge the chicken. Add salt and then toss the chicken well in the buttermilk. (Marinate for at least 3 hours or preferably overnight)
③ In a large bowl, add flour, salt, pepper, and baking powder. Mix well. Add 2-3 Tbsp of the buttermilk marinade to the breading mix and mix to combine. Add the chicken tenders, 3-4 at a time, and toss well with the flour. Press lightly to ensure you get crusting and layers of flour over the marinated chicken.
④ Pour oil in a cast iron skillet or dutch oven until it fills around 2 inches of the height of your skillet/dutch oven .Preheat the oil to around 350F.
⑤ Carefully, transfer each breaded chicken to the oil and fry until crispy golden brown outside, make sure to turn the chicken every 2-3 minutes to ensure even color on each side.
⑥ After 8-10 minutes, transfer each chicken piece to a baking sheet lined with a wire rack. Check to see if the internal temperature at the thickest part of the chicken is 165F.
⑦ For the sauce, whisk all the ingredients together in a small mixing bowl. Cover and place in the fridge while you prep all the other ingredients.
⑧ You can cook your bacon in the oven, fry pan, or air fryer until crispy. Then drain on paper towels.
⑨ Assemble the sandwiches – spread the sauce on both insides of the bun, add the chicken strip(s), bacon slices, lettuce, onion, tomato, and pickles. Finish with extra sauce and enjoy!
