Blueberry Cheesecake Pinsa

Ingredients

• 1 pack Turano Pinsa Crust
• 8 oz Cream Cheese, Softened
• 8oz Mascarpone Cheese
• 1ea Egg Yolk
• 1 ea Lemon, Zested
• 2 cups Blueberries
• 1 tbsp Sugar
• ¼ cup Water


Directions

① Heat the oven to 450°F
② Combine Blueberries, Sugar, and Water in a small saucepan and bring to a boil over medium heat. Once boiling reduce the heat to a gentle simmer
③ Cook, stirring occasionally for 15-20 minutes, until the liquid has reduced to a syrupy consistency
④ Remove from the heat and pour into a heat safe bowl
⑤ Combine the Cream Cheese, Lemon Zest, Egg, and Mascarpone Cheese and beat with a fork or hand mixer until fully incorporated
⑤ Remove the Pinsa crusts from the package
⑥ Spread ½ cup of the mixture onto each crust
⑦ Use a slotted spoon to drain the blueberries from the syrup and scatter them over the top of the pinsa crust
⑧ Bake directly on the oven racks for 5-7 minutes until the cheese has melted and the Pinsa
⑨ Crust is crispy on the bottom
