• Turano Gourmet Brat Rolls
• 6 ounce smoked sausages
• 2 medium Yukon gold potatoes, peeled, cut into 1/2-inch dice
• 2 tablespoons unsalted butter
• ½ medium onion, chopped
• ½ medium green bell pepper, seeded, chopped
• 1 ½ cups sliced mushrooms
• 6 large eggs
• ¼ cup whole milk
• salt and pepper to taste
① Fry fully cooked smoked sausage in a skillet with a little oil on medium-high heat for about 7-10 minutes, frequently turning. Set aside.
② Place potatoes and 2 tsp. salt in a large, deep skillet and cover with cold water by 1 inch. Bring to a boil over high heat, reduce to a simmer and cook until potatoes are just tender for about 8 minutes. Drain. Wipe the skillet.
③ Melt butter in the same skillet over medium heat. Add vegetables to skillet; season with salt and pepper, stirring occasionally until mushrooms have browned and vegetables are tender for about 8 minutes.
④ Whisk eggs with milk in a medium bowl; season with salt and pepper. Add sausage and potatoes to vegetables in the skillet and stir to combine. Pour in egg mixture and cook, stirring constantly, until eggs are set but still creamy, about 1 minute.
⑤ Top the Gourmet Brart rolls with the smoke sausages and the scrambled eggs mixture and enjoy!
