Chef Paul's Famous Meatloaf


• 5 oz. bread cubed
• ¼ cup whole milk
• 2 lb. Fine ground beef chuck
• 3 tbl. cup seasoned breadcrumbs
• 1/3 cup BBQ sauce of choice or chunky tomato sauce (salsa also works)
• 2 eggs
• 1 tsp. salt
• ½ tsp. Black pepper
• ½ cup fine-diced onion
• 1 tsp. granulated garlic
• 1 tbl. chopped parsley
• ¼ cup chili sauce


Soak bread in milk until completely saturated. Mix by hand to crumble.
In a large bowl combine all ingredients other than the chili sauce until well blended.
Bake on a rimmed baking pan/sheet pan for 35 minutes. Remove from oven, spread each loaf with ½ cup of chili sauce then continue to bake for an additional 10 minutes.
Check internal temp. Should be 150 to 160 degrees.
Remove from oven and serve or allow to cool, refrigerate overnight to make sandwiches.
