Chicken Spiedie Minis
Ingredients
½ cup mayo
¼ cup chopped cherry peppers/pimientos with packing liquid
4 cloves garlic
2 tbl. red wine vinegar
1 tsp dried oregano
2 tsp salt
2 tsp black pepper
2 tbl olive oil
1 tbl sugar
1.5 lbs boneless, skinless chicken breast, cut into 1.5” cubes
2 tbl vegetable oil
4 Turano Bambino Rolls, hinge sliced
Directions
Mix together all ingredients for chicken marinade in a bowl, add all but ¼ cup of marinade plastic zip top bag (retain the remaining ¼ cup in the refrigerator). Add chicken to bag and distribute marinade evenly. Refrigerate overnight.
Distribute chicken chunks onto 4 wooden skewers.
Fire up grill to medium-high heat. Grill chicken until cooked through, about 2 minutes per side (4 sides, 8 minutes total. Let rest 3-4 minutes.
Toast buns on grill for 1 minute.
Place chicken skewers on Bambino rolls, twist skewers to loosen and pull out.
Drizzle chicken with remaining marinade and serve.
