Ingredients
2 tbl. vegetable oil
2 lbs. ground beef (80/20 or leaner works best)
1 ½ tsp. cumin
½ tsp. pepper
2 tbl. mild chili powder
½ tsp. salt
½ yellow onion, chopped
1 clove garlic, minced
1-2 chipotle chiles, chopped (use canned chiles and add adobo sauce, if desired)
1-29 oz. can pink beans
1-29 oz. can red kidney beans
Sour cream, to taste
Shredded cheddar cheese, to taste
Directions
In a large pot over medium heat, heat the oil.
Place beef in the pot and brown, 2-3 minutes.
Add cumin, pepper, chili powder, onion, garlic and salt. Stir to coat.
Add chiles and beans.
Let simmer, stirring occasionally, for 20-30 minutes.
Serve with cheese and sour cream (if desired).
