Falafel Smash Sandwich


• 5 Rustic Grain slices
• 1 1/2 cups cooked chickpeas drained and rinsed
• 3/4 tsp salt
• 1 tsp ground cumin
• 1 tsp ground coriander
• 1/4 teaspoon crushed red pepper
• 1 Tbsp. olive oil
• 1/4 cup plain non-dairy yogurt
• 1/2 lemon
• Arugula, pea shoots, pickled red onions to taste
• 1 garlic clove crushed or minced
• 4 handfuls of cilantro, finely chopped
• 1/2 cup of olive oil


① In a bowl, lightly mash the chickpeas with a fork, or pulse them briefly in a food processor.
② Stir in the salt, ground cumin, ground coriander, crushed red pepper, lemon juice, and olive oil.
③ In a small bowl, stir in the minced garlic, cilantro, 1/2 cup of olive oil, and 1/2 tsp of salt.
④ Toast the Rustic Grain slices and layer them with yogurt, pea shoots, and arugula, chickpeas, cilantro, and pickled red onions.
