Peachy Pork BBQ Sandwich


For Pork:
• 2 lbs. pork butt
• 1 tbl. salt
• ½ tbl. black pepper
• 2 tbl. oil
• ¼ cup Dijon mustard
• 1 can root beer
For Peaches:
• 4 peach, pitted, sliced into eights
• 4 tbl. butter, melted
• 1 cup spicy BBQ sauce
• 16 Turano Bambino Rolls


For Pork:
① Preheat oven to 325°F. Season pork butt with salt and pepper. In an oven safe pot or Dutch oven over medium high heat, heat oil then sear pork butt on all sides, about 2 minutes per side.
② Remove pork from the pot and set aside. Smear mustard on pork butt. With pot over high heat, deglaze pan with root beer.
③ Add pork back to the pot, cover and braise in the oven 4-5 hours. Remove pork from liquid, let cool 15-20 minutes, then pull meat and add back to liquid until ready to use.
For Peaches: ④ ⑤ ⑥
④ Preheat grill to medium heat.
⑤ Toss cut peaches with melted butter. Grill for 1 minute per side or until distinct grill marks form.
⑥ Place pork, grilled peaches and barbecue sauce on telera rolls and serve.
