Pepper & Egg Sandwich on Bambino Roll


• 4 Turano Bambino Rolls
• ¼ cup Olive oil
• 2 bell peppers (any color will work, I like red and yellow)
• ¼ yellow onion, sliced thin
• 4 eggs, whipped
• Salt and Pepper, to taste
• 3 oz. shredded mozzarella cheese


① Preheat oven to 350°F. Bake Bambino rolls 3-4 minutes. Set aside to cool for 2-3 minutes.
② Using a pair of metal tongs, press through the crust on one side of the roll until most of the way through. Twist and clamp the tongs to remove the interior of the roll. Save the interior piece.
③ In a medium skillet over medium heat, sauté peppers and onions in olive oil for 5-6 minutes or until tender, but still firm.
④ Add eggs and scramble until cooked, but still soft. Turn off heat. Add shredded mozzarella and stir until just melted.
⑤ Stuff egg mixture into the rolls and cap each open end with reserved bread interiors.
