Pulled Chicken Sandwiches on Gourmet Rolls


• 4 Gourmet Sandwich Rolls
• 2 lb Chicken thighs
• 2 Tbsp extra virgin olive oil
• 1 bottle of your favorite barbeque sauce
• 1 lb coleslaw


① Preheat the oven to 325ºF.

② Heat a cast iron dutch oven over medium heat, add the oil and heat about 3 minutes. Sear the chicken on both sides, about 3 minutes per side until golden brown. Add ½ c sauce and bring mixture to a simmer over medium heat. Cover and transfer to the oven. Cook for 1.5 hours, or until chicken pulls apart with a fork. (If you don't have a cast iron dutch oven, sear chicken on both sides in a pan, transfer to a slow cooker and cook on high for 1.5 to 2 hours)

③ Once cool enough to handle, shred chicken with 2 forks and add additional sauce to taste. Portion BBQ on buns. Top with coleslaw and serve.
