Red White & Bison Burger

Red White & Bison Burger


• 1 egg white
• 2 tsp. water
• 4 Turano Brioche buns
• 1⁄2 tsp. sesame seeds
• 1⁄2 tsp. poppy seeds
• 1⁄2 tsp. cranberry seeds
• 1lb. tomatoes, cored and rough chopped 1⁄3 cup sugar
• 1 Tbsp. white balsamic vinegar
• 1⁄4 tsp. salt
• 1 bay leaf
• 2 springs fresh thyme
• 4 bison patties
• 4oz. goat cheese


① Preheat oven to 350 ̊F. Whisk the egg whites and water together then brush onto brioche buns. Combine all seeds and sprinkle on the buns. Bake for one minute and set aside.
② To make the tomato jam, add the tomatoes, sugar, balsamic, salt, bay leaf and thyme in a small pot. Bring to a simmer and reduce until the jam has thickened, about 40 minutes. Chill until ready to use.
③Grill bison patties to desired doneness and top with goat cheese. Place each burger on the brioche buns and top with tomato jam. Serve and enjoy!
