Sausage & Peppers

Ingredients
• 4-6 spicy Italian sausages
• 4-6 Turano Gourmet Brat Rolls
• 2 red bell peppers, sliced
• 1 poblano pepper, sliced
• 1 red onion, sliced
• 2 tbsp olive oil
• ¼ cup dry red wine
• 1 tsp dried oregano
• ½ tsp red pepper flakes
• Salt and black pepper, to taste
Mustard Sauce
• 1 cup mayonnaise
• 2 tbsp whole grain mustard
• 1 tbsp fresh lemon juice
• Salt and black pepper, to taste
Directions
① In a small bowl, combine the mayonnaise, whole grain mustard, lemon juice, salt, and pepper. Mix until smooth and refrigerate until ready to use.
② Heat olive oil in a large skillet over medium-high heat. Add the Italian sausages and cook for 8-10 minutes, turning occasionally until browned on all sides. Remove from the skillet and set aside.
③ Add the sliced peppers and onion to the same skillet. Cook for 5-7 minutes, stirring occasionally, until softened.
④ Pour in the red wine and scrape up any browned bits from the bottom of the pan, add in seasonings of salt, pepper, and oregano. Allow the wine to simmer and reduce slightly, about 2-3 minutes. Ad
⑤ Return the sausages to the skillet and continue cooking for 5 -10 minutes, until the sausages are fully cooked and the peppers and onions are tender.
⑥ Lightly toast the Turano Gourmet Brat Rolls if desired.
⑦ Spread a generous amount of the mustard sauce inside each roll. Add a sausage to each roll and top with the sautéed peppers and onions.
⑧ Serve immediately and enjoy.
