Stracciatella & Fried Mortadella Sandwich with Homemade Pesto

Ingredients
Burger
• 2 Turano Soft Sub Rolls
• 1 lb of sliced mortadella
• 8 oz stracciatella cheese
• 2 cups fresh arugula
• ¼ cup chopped pistachios
• 2 tbsp extra virgin olive oil
• Butter
Homemade Pesto
• 2 cups fresh basil leaves
• ½ cup shelled pistachios
• ½ cup grated Parmesan cheese
• 2 garlic cloves
• Juice of ½ lemon
• ½ cup extra virgin olive oil
• Salt and black pepper, to taste
Directions
① Prepare the pesto by combining the basil, pistachios, Parmesan cheese, garlic, and lemon juice in a food processor. Pulse until finely chopped. With the processor running, slowly drizzle in the olive oil until smooth. Season with salt and pepper to taste.
② Fold each slice of mortadella back and forth accordion-style and thread onto wooden skewers, using 2-3 slices per skewer.
③ Heat a large skillet over medium-high heat. Add butter and cook the mortadella skewers for 2-3 minutes per side, until the edges are crispy and lightly caramelized.
④ Slice the Turano Soft Sub Rolls and lightly toast if desired.
⑤ Spread a generous layer of the homemade pesto on the bottom half of each roll.
⑥ Add a layer of fresh arugula, followed by the fried mortadella skewers (remove the skewers before serving).
⑦ Spoon the stracciatella cheese generously over the warm mortadella and finish with the chopped pistachios.
⑧ Close the sandwich, drizzle with a little extra virgin olive oil if desired, and serve immediately.
