Sweet Corn & Tomato Salad
Ingredients
4 ears of sweet corn, shucked
20 cherry tomatoes, halved
¼ red onion, diced
½ avocado, diced
¼ tsp. thyme leaves, picked
5-6 peppadew peppers, chopped (you can find these packed in jars in the canned vegetable section or pickle section)
1 tsp. dijon mustard
1/2 t red wine vinegar
Pinch of salt
Pinch of pepper
¼ cup olive oil
Directions
Boil or grill the corn, then cool to room temperature
Shave the corn kernels off of the cobs by turning them up on their stalk ends and moving your knife back and forth. Place into a mixing bowl.
Add the onion, avocado, tomatoes, thyme leaves and peppadews to the bowl.
Mix vinegar, salt, pepper and mustard in another bowl. Slowly drizzle in oil while whisking the mixture to create an emulsion.
Mix dressing with salad and serve.
