Sweet Vegetarian Sandwich

Ingredients

• Turano Rustic Italian or Pane Turano bread
• 4 eggs
• Butter
• Olive oil
• Black beans
• White onion
• 3 Sweet Plantains (fully ripe, black)
• 2 large, ripe avocados


Directions

① Soak the black beans overnight in a pot. Replace the water with fresh water in the bean pot. Add the sliced white onion to the pot and cook the black beans for 60 minutes in a simmer
② Strain beans and turn into a puree, not too mushy, leave some texture. Next, cut the plantains into slices that will fit onto the bread and preheat a large skillet or griddle on medium heat.
③ Add oil to the skillet. Add the plantains and cook for about 2 minutes, flipping twice as necessary. Take off plantains and place on a plate covered with a paper towel to soak any excess oil.
④ Mix the eggs in a bowl. Remove most of the oil from the skillet, or get a new skillet and add butter that melts. Add eggs to skillet and turn until soft, but not runny
⑤ Assemble sandwich with bean spread, plantains, scrambled eggs, and avocado. Grill sandwiches for 1-2 minutes per side or until until both sides are golden brown.
