Zucchini Latkes
Zucchini Latkes
Ingredients
3 medium zucchini, shredded on a cheese grater
1 tsp. salt
2 eggs, beaten
1/4 cup Turano Bread Crumbs
2 tbl. all-purpose flour
1/4 tsp. pepper
¼ cup green onions or chives, chopped
Oil for frying
Chopped chives or parsley, for garnish
Directions
In a bowl, combine zucchini and salt. This will allow some of the moisture to leach out. Squeeze zucchini against the side of a strainer. Transfer back to the bowl and combine with eggs, bread crumbs, flour, pepper and chives.
In a large skillet over medium heat, heat oil. Spoon mixture into oil about one tablespoon at a time. Flatten each spoonful with the back of the spoon until thin and flat. Fry for 2 minutes on each side or until golden brown.
Serve with sour cream and chopped chives or parsley.
