Cheesy Corned Beef Sandwich with Stout Braised Onions
Ingredients
Cheesy Corned Beef Sandwich with Stout Braised Onions Ingredients:
• 1 slice – Pane Turano bread, cut in half
• 3T – Garlic & Herb Boursin Cheese, split, softened
• 1/3 lb. - Vienna Corned Beef Brisket, sliced thin across the grain
• 1/3C Guinness Stout braised onions
• 2T – Unsalted Butter, split, softened
Beer Braised Onions Ingredients
• 3 Medium White Onion, sliced 1⁄4” thick
• 1⁄2 sock unsalted butter
• 2T Canola Oil
• 1C – Stout Beer
• 1C - Low Sodium Beef Broth
• 1T – Light Brown sugar
• 1T – AP Flour
• 2 tsp – Worcestershire sauce
• 1/2tsp – Minced Fresh thyme
• Salt & Pepper to taste
Directions
Beer Braised Onion Steps:
① On low heat in a medium size pan, melt butter then add oil. Place onions in the pan and toss to coat.
② Cook, stirring often until onions are caramelized, approx. 30-40 minutes.
③ Add brown sugar and Worcestershire sauce, and mix until blended approx. 1 min
④ Add flour, mix well and cook for 1 min more
⑤ Add stock and Stout Beer and mix mixture. Bring to simmer and let reduce until desired consistency, bear in mind this will cool and thicken slightly.
⑥ Add thyme, salt and pepper to taste.
⑦ Let cool, completely.
Sandwich Build Steps:
① Pre-heat a medium-sized, non-stick skillet on medium heat
② Butter one side of the bread and flip over onto plate and spread with herbed cheese. Do this twice and reserving 1 for the top of sandwich.
③ Place 1 slice butter side down and build with Corned Beef followed by the onions.
④ Top with other slice of bread, cheese side down and place sandwich into pan.
⑤ Toast both sides and then remove from pan. Enjoy!
