Mini Brioche Lobster Rolls


• 1 pkg. Turano Mini Brioche Rolls
• 1 Tbsp. butter, unsalted
• 1/3 cup mayo
• 1 Tbsp. lemon juice
• ½ tsp old bay seasoning
• Salt & pepper, to taste
• 1 celery stalk, finely chopped
• 9oz cooked lobster meat, cut into ½ inch pieces
• 2 tsp. chopped chive


① Cut each cluster in half and butter both sides of the rolls. Griddle each roll on medium heat until both sides are golden brown. Split each roll on the top and set aside.
② In a bowl combine mayo, lemon juice, old bay, salt and pepper. Mix together then fold in chopped celery and lobster meat. Spoon lobster mixture into each roll and garnish with chopped chives.
