Sicilian Baked Cod

Pane Pesto Chicken Pizza


4 slices Pane Turano, toasted 2 tablespoons olive oil Salt and pepper, to taste 4- 8-9 oz. cod fillets 1 onion, medium, peeled and chopped 2 cloves garlic, peeled and sliced thin 8 Roma tomatoes, sliced 2 Tbl. capers 1 teaspoon red wine vinegar 1/4 cups fresh parsley, chopped


Preheat oven to 350°F. Rub large casserole pan with oil Season the cod with salt and pepper and place the fish in the dish. In a bowl, combine onions, garlic, tomatoes, capers, and vinegar. Toss to combine. Cover with foil and bake for 30 minutes. Uncover and bake an additional 10 minutes. Serve with toasted Pane Turano to soak up all of those wonderful juices.
