Cheesy Andouille Sausage & Pepper Sandwich

Ingredients
• 5 Turano French Rolls
• 5 Andouille sausages
• 1/2 cup sliced yellow onions
• 1/2 cup sliced bell peppers (red, green, or a mix)
• 1 tbsp Cajun seasoning (adjust to taste)
• 5 slices mozzarella cheese
• 2 tbsp olive oil
• 2 tbsp fresh parsley, chopped (optional, for garnish)
• Salt and pepper to taste
Directions
① Preheat oven or toaster oven to 425°F
② Add peppers and onions to a large sheet pan. Drizzle with olive oil and season with Cajun seasoning, salt, and pepper. Toss everything together, then nestle the sausages into the vegetables. Bake until the sausages are cooked and the vegetables are tender, about 25 minutes.
③ When the sausages are done, load the French Rolls with sausage and peppers/ onion mixture. Place them on a sheet pan and top with mozzarella.
④ Turn on the broiler. Toast the French Rolls for 2-4 minutes or until the cheese has melted and the buns are toasted on top.
⑤ Remove from the over, garnish with chopped parsley if desired and enjoy!
