Chorizo & Bean Molletes


• 2 Turano English Muffins
• 1 avocado, mashed
• 4 oz. Mexican chorizo
• 4 eggs, beaten
• ½ cup black beans, heated
• ½ cup pico de gallo
• ¼ cup Cotija cheese, crumbled


① Preheat oven to 350°F. Place halves of Turano Gourmet Sandwich Rolls cut side up on a sheet tray, and then bake for 2-3 minutes or until buns are crisp.
② In a skillet, heat chorizo over medium heat, breaking chorizo into small pieces.
③ Once chorizo is browned add eggs to the pan and scramble to desired doneness
④ Top buns with mashed avocado, egg mixture, black beans, pico and cotija cheese, then serve.
