Fig and Prosciutto Panini

Ingredients
8 slices of pane turano bread 4 oz thinly sliced prosciutto 1 cup of shredded mozzarella cheese 1/2 cup of baby spinach leaves 2 tablespoons of fig preserves 1 tablespoon olive oil

Directions
Place a medium size skillet over medium-high heat, add 1/2 tablespoon of olive oil. Assemble the sandwich, evenly divide the prosciutto, mozzarella cheese, and spinach over one side of the bread. spread 1 tablespoon of fig preserves on the remaining slices, then close sandwich. coat the outside with cooking spray or butter, and place them on the skillet. (you can substitute the skillet with a panini grill if available) cook for 3-4 minutes or until cheese has melted and the outside is desired level of golden brown. Flip over and repeat on the other side, remove from heat, and serve immediately.
