French Onion Burger

Ingredients

• ¼ cup parmesan cheese
• 1 Tbsp. extra virgin olive oil
• 1 Tbsp. butter, unsalted
• 2 medium yellow onions, sliced
• ½ tsp. salt
• ¼ tsp. black pepper
• ¼ tsp. garlic powder
• ¼ tsp. fresh thyme
• 2 Tbsp. brandy
• 1 cup beef stock
• ½ tsp. corn starch
• ½ tsp. water
• 4 burger patties
• 1 cup gruyere cheese, shredded
• 4 Turano Brioche Rolls


Directions

① To make the parmesan crisps, preheat oven to 350˚F. On a parchment lined baking sheet, divide the parmesan cheese in 4 equal piles. Gently smooth out into flat, even circles and bake for about 5 minutes or until golden brown. Set aside to cool.
② In a medium pan on low heat, add the oil and butter. Stir in onions and add salt, pepper, garlic powder and thyme. Cook for about 30 minutes or until the onions are soft and golden brown. Deglaze the pan with brandy then add the beef stock and reduce by half. Mix the corn starch and water in a small bowl then add to the onion mixture. Cook until the liquid has thickened, set aside.
③ Cook the burgers to desired doneness then top with gruyere cheese. While the cheese starts to melt, toast the brioche rolls. Top burger with French onion mixture and parmesan crisps and enjoy!
