Red & Green Cheesy Chicken Sliders

Ingredients
For the Sandwich:
• 1 package Turano Mini French Rolls (8 rolls)
• 2 skinless, boneless chicken breasts, shredded
• ½ cup roasted red peppers, chopped
• 12 slices Mozzarella cheese
For the Spinach Dip:
• 1 tbsp butter
• 1 pack (8 oz) cream cheese, softened
• 1 bag fresh spinach, chopped
• ½ shallot, diced
• 4–5 cloves garlic, minced
• 8 oz Monterey Jack cheese, shredded
• ½ cup mozzarella cheese, shredded
• ½ cup Parmesan cheese, shredded
• ¼ cup sour cream
• 1 tbsp heavy cream (optional)
• ½ tsp garlic powder
• ¼ tsp smoked paprika
• ¼ tsp salt
• 2 tbsp olive oil
For the Garlic Butter Topping:
• 3 tbsp butter
• 3–4 cloves garlic, minced
• ½ tbsp red pepper flakes
• ½ tbsp Italian seasoning
• 1 tsp parsley
Directions
① Preheat Oven & Prepare Chicken: Preheat your oven to 375°F (190°C). Shred the cooked chicken using a hand mixer or forks.
② Prepare Spinach Mixture: Chop the spinach, garlic, and shallot. In the same skillet, add butter and 1 tbsp olive oil. Add the chopped spinach and cook until wilted. Add the shallots and garlic, sautéing for a few minutes. Transfer the cooked spinach mixture to a strainer and press down to remove excess liquid. In a bowl, add sautéed spinach mixture, cream cheese, sour cream, Monterey Jack cheese, Parmesan, mozzarella, garlic powder, smoked paprika, and salt. Mix until well combined. If the mixture is too thick, add heavy cream to reach desired consistency.
③ Prepare Garlic Butter: In a small bowl, add melted butter, minced garlic, red pepper flakes, Italian seasoning, and parsley. Mix until well combined.
④ Assemble Sliders: Separate the tops and bottoms of the Mini French Rolls. Place the 8 Turano Mini French Rolls bottom halves in a baking pan and place in the oven to slightly toast. Add the spinach mixture on the bottom, top with shredded chicken, cheese slices and roasted red peppers. Place the top halves of the rolls back on top.
⑤ Bake: Brush the garlic butter mixture generously over the tops of the rolls. Bake in the preheated oven for 10–15 minutes, or until the cheese is melted and the rolls are golden brown.
⑥ Serve: Remove from the oven and let cool slightly before serving. Enjoy!
