Reuben Monte Cristo

Ingredients
• 2 slices - Turano Rye Bread
• 4 slices – Swiss Cheese
• 3T – Russian Dressing (recipe below), split.
• 1/4lb - Vienna Corned Beef Brisket, sliced thin across the grain
• 1/2C – Vienna Beef Sauerkraut, drained
• 2T – Unsalted Butter, split, softened
• 2 Ea- Eggs, beaten
• ½C - Mayonnaise
• 1/2C – Sour Cream
• 1/4C – Ketchup
• 1T – VB Green Relish
• 1tsp – Lemon Juice
• 1 clove – Grated or finely minced garlic
• 1T – Minced Shallot
• 1tsp – Worcestershire
• ¼ tsp – Sweet Paprika
• ¼ tsp – Cayenne pepper
• Salt and Pepper to taste
Directions
① Pre-heat a medium-sized, non-stick skillet on medium heat
② Spread Russian over one side of each slice of bread, followed by Swiss cheese, corned beef and sauerkraut
③ Place top piece dressing side down, pick up the whole sandwich and coat in the beaten egg.
④ Add 1Tbsp butter to the pre heated pan, once melted add the sandwich
⑤ Toast until bread is golden brown and egg is fully cooked, flip sandwich and do the same on the
other side.
⑥ In a medium sized bowl, whisk together all dressing ingredients. Taste and adjust to your preference.
⑦ Place into airtight container and refrigerate for 1 hour.
⑧ Assemble sandwich, cut in half, and enjoy
