Yucatan Pork Loin Sub
Ingredients
2 Turano French Rolls, toasted
6 oz. sliced pork loin
1/4 c. achiote sauce (recipe follows)
1/4 c. pickled vegetables (recipe follows)
Achiote Sauce:
1/2 c. achiote paste (found in the Mexican/Latin section of the supermarket)
1/4 c. orange juice
1/4 c. lime juice
Pickled Vegetables
1 medium carrot, cut into ribbons using vegetable peeler
1/2 red onion, sliced thin
1 jalapeno, sliced thin
1/2 c. white vinegar
1/2 c. water
1 tbl. salt
Directions
Mix all ingredients for Achiote Sauce together in a small pot over low heat until thoroughly combined, let simmer 5-10 minutes.
For pickled vegetables, in a small sauce pot, bring all ingredients for vinegar, water and salt to a boil.
Pour liquid over vegetables, cover and let sit at least 30 minutes.
In a skillet, warm the pork loin slices in the achiote sauce, 2-3 minutes.
Place sliced pork loin on french rolls, then top with pickled vegetables.
